Did I mention that I’m currently pregnant? I’m pregnant! So pregnant that I’m allllmost not pregnant. I am really looking forward to not being pregnant.
Don’t get me wrong – the ability to create life is an amazing super power. But I miss having room for food in this body and having a sultry santer instead of a jiggly waddle. And having ankles. I miss all these things. And I’m super duper incredibly excited to meet this new little person who’s been kicking me in the bladder for 4 of the last 9 months! So excited that I’ve started perusing the internet and inquiring on Facebook for ways to get things moving already!

Spicy food – Heck yeah.
So when I saw Pinch of Yum’s Sweet Chili Garlic Chicken Pizza I thought to myself, “Self, let’s do this thing.” Cue Eye of the Tiger background music.
If you’re anything like me than you always decide to make pizza at exactly the moment you already wish you were eating pizza. Which is challenging since dough moves for no man! But I like to push the limits. I always look for the warmest possible space in the house that won’t kill my yeast (yeast begins to die at 120 degrees so short of putting it in an oven or outside in Arizona it should be fine). Sometimes this is on top of the oven, sometimes it’s covered near a window…and sometime it’s on top of the dryer. 🙂
But if you happen to be a planner and aren’t just working on the whim of your tummy then this would be a great prep-ahead meal. The dough, pico de gallo and chicken breast could all be prepared that night before and this meal could be ready to rock in less than 30 minutes.
I did survive the wait and it was well worth it. The pizza was a fresh taste on an old classic. The only change I can offer is to use the pico sparingly to avoid soggy crust. I like a thin, crisp crust and over pineappling it was not the business.
And, to answer the bigger question- does this pizza help induce labor….
