Meal Plan Week 1

I’ve done one post on how I meal plan (more to come on that front) but I thought it would be fun to start the New Year off with a new series – The Plan – a list day by day of the actual recipes I’ll be making. A good plan can make or a break a week. I can totally tell the difference if I phoned in the meal plan when we have to make several midweek trips to the grocery store or when we’re eating breakfast for dinner more than two nights a week (waffles have totally saved my ass on more than one occasion).

I hope being accountable for my meals plans here will help me to be more creative, to try a few new things and to plan my weeks better. And perhaps there will be some ideas for you too! Or perhaps you have ideas for me…recommendations in the comments section would be greatly appreciated – thanks in advance.

So here it goes! Nom nom nom…


  • Breakfast- Cereal and Mandarin Oranges
  • Lunch- Salami Sandwiches
  • Dinner- Meatloaf and Mashed Potatoes


  • Breakfast- Starbucks – we do this every week. I have a tall drink with a Slow Roasted Ham & Swiss. And then do sit in my PJs until 1pm.
  • Lunch- Meatloaf Sammies
  • Dinner- Leftover Meatloaf



  • Breakfast- Oatmeal and Toasted Pecans
  • Lunch- Leftover Casserole and a green salad
  • Dinner- More leftover casserole! seriously this makes a lot.



  • Breakfast- Toasted PB and J
  • Lunch- Leftover soup
  • Dinner- Quick Chicken Fajita- Recipe to be posted here soon!


  • Breakfast- Oatmeal and Toasted Pecans
  • Lunch-Chicken Wraps (Leftover fajita chicken with lettuce, avocado and ranch dressing on a tortilla)
  • Dinner- Whatever we didn’t eat OR Pizza

Lots of big meals with leftover potential this week because today is my last day of maternity leave and I wanted to make things as easy as possible. I’m feeling enough feelings about leaving my baby – I don’t want to be hangry as well!
